Summary
Chim chum (Thai script: จิ้มจุ่ม) is a Thai style hot pot where the ingredients (meats, vegetables, mushrooms, noodles) are cooked in a clear herb broth of lemongrass, galangal and kaffir lime leaves. Additionally, the broth can contain other herbs such as bai kraphao (Thai basil), spices such as chillies, or be a meat broth using, for instance, pork ribs as one of the base ingredients. Traditionally an earthenware pot is used as here in the image.
