My husband's uncle shared this super quick and easy recipe with us during his recent visit.
Pickled Mango - 2 to 3 large semi-ripe mangoes - chili powder - 3 tsp salt (or to taste) - 2 limes
Chill mangoes in refrigerator before use. In a large bowl, peel and cut mango flesh into small, bite-sized cubes. Be careful as the flesh is slippery. Sprinkle with chili powder to your level of heat. (I usually sprinkle about three rounds over the mangoes.) Add salt. Cut limes and squeeze lime juice over mangoes. Mix well and serve.
Keep either chilled or at room temperature, according to your preference.
You can easily adjust this recipe to suit more mangoes. Just add the ingredients to taste. You can't go wrong, really.
