Swedish fruit soup

Swedish fruit soup (Swedish: fruktsoppa,[1][2] Swedish: blandad fruktsoppa (mixed fruit soup)[3] is a fruit soup that is typically prepared using dried fruits, and usually served as a dessert dish.[2][4][5][6][7][8] The dish has been described as a "cold fruit pudding."[9] It is a traditional dessert in Sweden and Norway.[8] Historically, during the winter months in Scandinavian countries, fresh fruit was generally unavailable, so people used dried fruits for the preparation of various dishes, including Swedish fruit soup.[4] The soup may be served hot or cold.[2]

Swedish fruit soup is a staple food in Scandinavian countries.[4] Consumption of cold fruit soups is also a tradition in the cuisine of Scandinavia.[10] Swedish fruit soup is also a traditional soup served during the Christmas holiday season.[11][12] The dish is also sometimes served as part of a smörgåsbord.[13] It may be served with cake, such as coffee cake.[12]

Ingredients and preparation

Dried fruits used in the preparation of Swedish fruit soup have included apricot, apple, pear,[14] raisins, currant[15] cranberries, prunes[4] grapes, cherry[2] cloudberry, arctic raspberry[16] and peaches.[5] Additional ingredients may include tapioca, sago, red wine,[14] sugar, lemon juice,[17] cinnamon, and salt.[2][4][15] Preparation involves soaking the dried fruits and various ingredients for some time to soften them, and then adding water and cooking the mixture until it thickens.[2]

It may be served as a cold soup, and can be stored unrefrigerated for a "reasonable" amount of time.[18] Its flavor may be enhanced by letting it sit for several hours prior to serving,[17] which allows the flavors to better intermingle and incorporate into one another. Swedish fruit soup may be prepared using a slow cooker.[14][5]

In the United States, it has also been prepared and served both hot and cold before meals as a sauce.[19]
