History

Due to social unrest, upheavals and invasions in China, many Chinese started migrating to other regions and countries. Chinese immigrants have been settling in India from centuries ago. But their communities and settlements in Chennai, Mumbai and Kolkata became more prominent towards the end of the 18th century. Wherever they settled down, a ‘Chinatown’ sprang up. Even today there is a sizeable Chinese community in Tangra, Kolkata. Descendants of the immigrants have immersed themselves into the local culture and have their own Indo-Chinese communities.

Desi Chinese

When Chinese immigrants in India started incorporating Indian masalas into their cooking, and when the locals adapted Chinese cooking techniques and seasoning to suit their tastes, they ended up creating a whole new cuisine in India: Desi Chinese. Indians fell in love with this fusion of Indo-Chinese flavours and have made it their own, by constantly evolving the cuisine and adding their own touches to it. There are new Desi Chinese dishes constantly being created using a blend of Indian-Chinese flavours, and given Chinese-sounding names such as Schezwan Bhajiya, Chinese Samosa, Schezwan Paneer, Chinese Bhel, Paneer Fried Rice and so on.

Today Desi Chinese is the second most popular cuisine in India. Though each region in India have their own ethnic specialities, they will also have their version of Desi Chinese. Regional Indian dishes themselves have not travelled so uniformly across the country. In the South, it’s more difficult to get Northern style Tandoori Chicken – than it is to get Desi Chinese. Similarly, while South Indian dishes are not available all over the North, Desi Chinese food can be found just about everywhere.

Varieties of Desi Chinese

Across the length and breadth of India, from Kashmir to Kanyakumari, there are hundreds of versions of Desi Chinese dishes. The ingredients, spices and seasoning vary from region to region. Chicken 65 in South India is tempered with curry leaves. In the North, chaat masala powder is sprinkled on Gobi Manchurian. Some say Chilli Chicken originated from Andhra Pradesh since it’s so spicy. Schezwan is a popular flavour and is blended with several dishes. Udupi restaurants serve Schezwan Dosas. Schezwan Chicken Tikka has been added to Biryani. A popular momo dip is Schezwan Chutney. There’s even a food cart offering of Schezwan Bhel.

Desi Chinese is ‘Soul Food’

Indians are so used to their version of Desi Chinese, that they have started demanding it wherever they settle. Now all over the world there are Indian Chinese restaurants serving the unique dishes that whet the appetites of Indians. People refer to Desi Chinese by many different names: Rasta Chinese, Canteen Chinese, Punjabi Chinese, Mughlai Chinese, Udupi Chinese, Manchurian Chinese, Indian Chinese and Hakka Chinese. The names of these carts also have an Indo-Chinese ring to them: Chopstix, Rice Bowl, Chop Chop, China Chowk, Stomach. Besides the ubiquitous Chowmein and Fried Rice, they offer ‘dry’ items such as Chicken Lollipops, and ‘gravy’ items that have Manchurian sauce, Schezwan sauce or a Sweet and Sour sauce. These Chinese fast food carts have popularized Desi Chinese food so much so that people are more familiar with Desi Chinese dishes than they are with regional Indian specialities.

Ching’s Secret

On seeing the Indians’ huge appetite for Desi Chinese food and observing that the Chinese food products being produced in India were in the unorganized sector and suffered from hygiene problems, Capital Foods created Ching’s Secret. Social initiatives

India Ke Hunger Ki Bajao

Ching's Secret launched India ke Hunger Ki Bajao, a global fund raising drive to fight hunger amongst underprivileged school children in India. The campaign was launched on 26th May with a video featuring Ranveer Singh. [3] Ching's Secret initiative seeks donation for The Akshaya Patra Foundation's mid-day meal programme, which currently serves 1.4 million children across schools in India. [4] India Ke Hunger Ki Bajao has helped raise more than Rs.1.8 crores in donations so far. [5]
