Kattama (Kazakh: қаттама, Kyrgyz: каттама, both Kazakh pronunciation: [qɑttɑmɑ]), Katlama, Katmer (Turkish: katmer), or gambir (Mongolian: гамбир Mongolian pronunciation: [ɢæmʲbʲĭɾ]) is a fried layered bread common in the cuisines of Central Asia. Single layered is called kalama in Kyrgyz cuisine.
